Once found only in specialty restaurants, Balti is fast becoming as popular as tandoori or tikka masala. Originating in Northern India, baltis are stir-fried versions of traditional Indian foods, cooked quickly over high heat. Balti, meaning 'pot' or 'bucket', takes its name from the heavy, wok-like dish in which it's cooked and served. The dish is also known as a 'karhai' or 'karahi.'

Sabzi Balti (Vegetable Balti)

Ingredients

3 tbsp. vegetable oil
1 onion, chopped
¾ cup cauliflower florets
2 zucchinis, sliced
1 red pepper, diced
1 green pepper, diced
¼ cup peas
2 tbsp. Patak's Balti Sauce
1-14oz can chopped tomatoes
1 tbsp. freshly chopped cilantro leaves

Method

Heat the oil in a medium pan, add onion and cauliflower, sauté for 1-2 minutes. Add remaining vegetables, continue sautéing for 5 minutes. Add Patak's Balti Paste and tomatoes. Partially cover and cook gently for 15 minutes, stirring ocassionally. Stir in half the cilantro, serve on a bed of rice and garnish with the remaining cilantro.
