In cooking, dried bay leaves are often preferred over the more bitter fresh leaves. Essential in French cuisine, bay leaves are part of the traditional bouquet garni and court bouillon. Whole dried leaves are usually added to a dish at the start of cooking, then removed when sufficient flavor has been extracted.
